Thai Chicken Satay with Spicy Peanut Sauce – “Summer Grilling Spectacular”

Summer grilling is all about enjoying good BBQ around the pool with a refreshing beverage.  Today, we bring an international flare to our Summer Grilling Spectacular with Thai Chicken Satay with Spicy Peanut Sauce.  These skewers of marinated chicken are pure delight to the taste buds, and work great entertaining around the pool or for parties.

The chicken is soaked in a rich marinade of coconut milk and spices, which brings a bright and earthy skin when grilled. Rich and creamy with a pop of heat from the chile-garlic sauce, the spicy peanut sauce is perfect for dipping Thai satay… and veggies, your fingers, just about anything!  This dish is one of the best finger foods you can have at a party, making it perfect when your guests are getting in and out of the pool.  So fire up the grill, jump in the pool, grill up some satay, jump in the pool, relax in the sun, and repeat…

Serves 4

Thai Chicken Satay with Spicy Peanut Sauce Ingredients

For the chicken satay skewers:

  • 1-1 ½ lbs. chicken tenders
  • 1 cup unsweetened coconut milk
  • 2 Tb. brown sugar
  • 2 Tb. fish sauce
  • 1 Tb. ground coriander
  • 1 tsp. cumin
  • ½ tsp. turmeric
  • 1 tsp. salt
  • Wooden Skewers, soaked

For the Peanut Dipping Sauce:

  • ½ cup peanut butter
  • 1 Tb. fresh minced ginger
  • 1/3 cup chicken broth
  • 1 Tb. honey
  • ¼ cup low-sodium soy sauce
  • 3 Tb. rice vinegar
  • 3 Tb. sesame oil
  • 2 cloves garlic
  • 1 Tb. chile-garlic sauce (optional)

Thai Chicken Satay with Spicy Peanut Sauce Directions

  1. Combine the coconut milk, brown sugar, fish sauce and spices in a large zip lock bag. Shake and add the chicken tenders. Marinate for at least 30 minutes.
  2. Soak the skewers in water for at least 30 minutes.
  3. Preheat the grill to direct medium heat. Weave each tender onto a skewer and lay on a foil-covered cookie sheet.
  4. Grill the Thai satay for 3 minutes per side.
  5. Meanwhile, puree all the ingredients for the peanut sauce in the blender and set aside.
  6. Serve the chicken satay skewers with spicy peanut sauce for dipping. (Optional: serve satay skewers over Jasmine rice.)
